mix whole milk ricotta, steamed diced spinach (drained/wrung dry), 1 egg, parmesan cheese, pinch nutmeg, 1 clove garlic, and salt. fill wonton wrappers or homemade pasta dough into desired shape. take out of boiling water a few minutes after ravioli float to surface. sprinkle with cornmeal to freeze assembled ravioli, or refrigerate. enjoy!
the sauce is really simple and this can easily be turned into tzatziki by dicing the cucumbers instead of slicing them. For the sauce, use plain yogurt (fage), fresh chopped dill, juice of one lemon, dash of cider vinegar, salt and pepper.
this is heavenly and just about the easiest thing to prepare. top any cooked pasta with freshly grated parmesan cheese, truffle oil, and pepper. serve immediately. (thanks to sam who brought the goods back from italy).
lunas been taking good care of the garden and things have grown! radishes and lettuce and kale! today i planted dill and chives (courtesy of er bear). hoping for sprouts in a few weeks!
after months of eating 2 meals a day out of the house, it is just so nice to make myself food again! well, by make i mean pick up pre-cooked shrimp from whole foods, but its a start. i made the iced coffee nonetheless. sigh, its good to be done, but im going to get restless with all the free time...
