sweet chicken stew


My coworker from Trinidad gave me this recipe that I tried last night. It was reallly good, very sweet, but with some fresh lemon at the end, it was actually quite nice. Here is what you need to do:

Coat the bottom of a pan with a generous amount of olive oil (I also used grapeseed oil)
Slice onions lengthwise and start to caramelize in the oil-- season as this point with salt, pepper, cayenne
Add a bunch of brown sugar, I probably added 4 heaping tablespoons
Let cook till everything is bubbling and the onions are cooked to your taste
Meanwhile, chop chicken breast and mix in a bowl with chopped parsley, a LOT of minced garlic, chopped scallion, and a little oil, salt and pepper and cayenne
Cook till chicken browns and is basically cooked through, then add a little water to give stew-like texture
Cook covered and/or uncovered till desired thickness, I added some flour to thicken the sauce a bit
Squeeze fresh lemon juice once the heat is turned off-- also on your plate.
Eat over brown rice!
