Ricotta !
Making ricotta by hand is actually really easy-- and super satisfying.
for a much smaller batch then pictured here:
3 cups whole milk (can sub some heavy cream in too)
3 tb. lemon juice (or citric acid)
salt to taste
bring milk just to a boil (or 190 degrees if you have a thermometer)
turn heat off and add acid of choice
mix and let sit for 5 minutes-- curds and whey will separate
pour over a few layers of cheese cloth set atop a bowl, large enough to catch the whey
either let sit for a few hours, or speed process by lifting the sides of cheesecloth and allowing the excess whey to drain
once the consistency you like, salt to taste
